Recipe: Pea & Mint Hummus


 

makes about 2 cups
 
1 cup cooked chickpeas
1/2 cup cooked peas
2 cloves garlic, minced
1 tablespoon roughly chopped fresh mint leaves
1/4 cup extra virgin olive oil
1 1/2 tablespoons fresh lemon juice
1/4 teaspoon ground coriander 
3/4 teaspoon coarse sea salt
 
Combine all ingredients in the bowl of a food processor, process until smooth. Add water, 1 tablespoon at a time to reach desired consistency. Adjust seasonings to taste.
