Recipe: Red Lentil Curry


6 cups 365 organic vegetable broth (homemade vegetable broth was used in this recipe)

2 cups 365 organic red lentils (rinsed and drained)

3 tbsp 365 organic EVOO

1 large organic white onion (peeled and chopped)

1 organic red bell pepper (seeded and chopped)

1 organic green bell pepper (seeded and chopped)

1 jalapeno (seeded and diced)

1 large organic potato (cubed into small bite size pieces)

1 large organic carrot (peeled and chopped)

1 organic eggplant (cut ends off and cube into small bite size pieces)

1 cup organic frozen peas

1 cup organic raisins

1 large organic red apple (cubed)

1 13.5 oz can of organic 365 coconut milk

1 tbsp chili powder (more or less depending on level of spice)

1 tsp coriander

1 tsp turmeric

1 tsp ginger (fresh grated is best)

3 tbsp curry powder

1 tsp cinnamon

1 tsp red pepper

salt and pepper to taste

 

LENTILS

In a large stock pot, bring lentils and broth to a boil. Boil until lentils are tender (follow instructions on your lentils, time may vary). When lentil are done, drain and set aside noting that most of the lentils will have absorbed most of the broth.

 

While your lentils are cooking, prepare your vegetable mixture for sauteing.

 

VEGETABLES

In a large sauteing pan or wok for depth, heat your EVOO to a medium heat.  Start by adding your onion and garlic, saute for about 2-3 minutes. Next add all of your vegetables EXCEPT the apple, raisins and frozen peas.  Saute the vegetable mixture for about 5-7 minutes or until tender, then add the apple. Saute for another, 3-5 minutes. Then add your raisins and peas, stir and lower temperature to medium/low.  Cover and let simmer.

While those ingredients are still simmering, in a large mixing bowl, mix your coconut milk and all your spices EXCEPT the salt and pepper.

 

CURRY

Whisk together until all spices are blended turning the mixture a reddish color.  Taste to determine salt and pepper.

Once, your mixture is to your liking, add it to your vegetable mixture and continue to simmer for about 10 minutes on low heat. 

 

Add your vegetable mixture to your lentils and combine together in a large mixing bowl.  

 

Remove and Serve.

 

I topped this dish with fresh cilantro and scallions.  Another great topping is organic plain yogurt or naan.
